What metadata does this remove?

It removes EXIF data, which can include the GPS coordinates where a photo was taken, the camera or phone model, the date and time, and camera settings. Re-encoding the image discards all of it.

Why should I strip EXIF before sharing?

Photos straight from a phone often contain the exact location they were taken. Posting them can reveal your home or routine. Stripping the metadata removes that hidden information while keeping the picture identical.

Does it change image quality?

Choosing PNG keeps the pixels lossless. Choosing JPEG re-compresses at the quality you set, which is usually visually identical at 90% or higher and gives a smaller file. Either way the metadata is gone.
